These white fish break down into succulent flakes when they are cooked, meaning they are not suitable for use in curries as they simply disintegrate. However, they are ideal for dishes containing little liquid, and are often coated with a spicy paste and fried. As cod stocks are low, haddock is the more environmentally friendly choice.
