Primarily eaten in coastal areas, especially in Kerala, squid are usually deep-fried or used in curries and coconut broths with other seafood. They should be either cooked slowly or very quickly, or they can become tough and chewy. They require preparation (see box), or alternatively you can buy pre-prepared frozen squid, also called calamari.
