Packed with flavour, pork is used in many parts of India, and especially in Goa, where the signature dish is Pork in Garlic and Vinegar, a fusion dish that was introduced by Portuguese traders. It is also found in fragrant Chinese-inspired dishes.
Cubed leg steaks and shoulder meat are normally used for slow-cooked dishes, while minced pork is shaped into meat patties. Home-smoked pork adds flavour to stews, while spicy dishes of pig’s liver are served with rice. As with all offal (innards) it is very important that the liver is extremely fresh.
