Packed with flavour, pork is used in many parts of India, and especially in Goa, where the signature dish is Pork in Garlic and Vinegar, a fusion dish that was introduced by Portuguese traders. It is also found in fragrant Chinese-inspired dishes.
Cubed leg steaks and shoulder meat are normally used for slow-cooked dishes, while minced pork is shaped into meat patties. Home-smoked pork adds flavour to stews, while spicy dishes of pigโ€™s liver are served with rice. As with all offal (innards) it is very important that the liver is extremely fresh.
