Crunchy, sweet and packed with nutrients, carrots appear in all manner of curries and stewed vegetable dishes. Like other root vegetables, they keep well in heat and are easy to transport as they do not bruise and spoil easily, unlike many other vegetables. If they are tender young carrots they may not need peeling, and if small enough can be left whole, with the green top removed. Older specimens will usually require peeling before being chopped or sliced.
