Vibrant and sweet, fresh green peas are added to a number of Indian dishes, such as potato cakes, curries and side dishes, to add colour, texture and taste. Frozen ones are just as good as the fresh type, if not better, and require only a quick rinse under cold water in a strainer before being used in the same way as fresh ones, making them the perfect stand-by ingredient.

The vibrant colour and sweet flavour of peas makes them a favourite ingredient.
