Colourful (bell) peppers make a crunchy and tasty addition to many dishes.

Large, crunchy, hollow pods belonging to the capsicum family, (bell) peppers are available in a variety of colours. Red peppers are the sweetest, orange and yellow ones are mild and quite sweet, while green ones have a stronger, more peppery flavour. They are used in a wide variety of dishes, adding both colour and flavour.
To prepare, cut the peppers in half lengthways, then remove the stem, core and all the bitter white membrane using your fingers or a knife. Slice or dice the remaining fruit as required.
