These distinctive-looking fruits have sweet, golden and exceedingly juicy flesh. Unlike most other fruits, pineapples do not ripen after picking, although leaving a slightly unripe fruit at room temperature will help to reduce its acidity. Pineapples are cultivated in India, mainly in the south, and are generally cooked with spices to make palate-cleansing side dishes.
