The volume of milk produced in India is one of the highest in the world and the dairy industry is big business. In addition to milk from cows, more than half of the milk comes from buffalo, and is sold in liquid form, as a stable, creamy yogurt and as cheese. Buttermilk, the by-product of the butter-making process, is also drunk and used in cooking.
