Corn and sunflower oils are the most popular oils in India. Sesame oil and groundnut oil are also used, and in the south, where coconuts are abundant, coconut oil is most popular. Mustard oil is used in everyday cooking in Kashmir, West Bengal and in the north-eastern states. When it reaches a high temperature it loses its astringent taste and aroma.
