This rice takes its name from Patna in Bihar, eastern India. At one time, most of the long grain rice sold in Europe came from here, and the term was used to mean any long grain rice, whatever its origin. The custom still persists in some parts of the USA, but elsewhere patna describes this specific variety of rice. It is used in the same way as other long grain rices.
