The favourite bread of central and southern India, the chapati is a thin, flat, unleavened bread usually made from ground wholemeal (whole-wheat) flour. Chapatis are cooked on a hot tava, a concave-shaped Indian griddle. They have a light texture and fairly bland flavour, which makes them an ideal accompaniment for curry dishes. Spices can be added to the flour to give more flavour.
