Now widely available outside of India, poppadums are large, thin, crisp discs, which can be bought ready-cooked or ready-to-cook. In India they are served with vegetarian meals. They are sold in markets and by street vendors, and are available plain or flavoured with spices or seasoned with ground red or black pepper. The dough is generally made from dried beans, but can also be made from potatoes or sago.

Crunchy poppadums are the ideal accompaniment to chutneys and relishes.
