Keeping cookies relatively uniform in size will ensure an evenly baked batch. For help getting it right, portion them out with a tool such as a measuring spoon, an ice cream scooper, or a cookie scoop. Take a big dip into the dough, then level off the spoon using the side of the bowl or the straight edge of a butter knife.
