Use mature, tender, medium-sized. (a) Peel and cut in 1in/2.5cm slices. Blanch 4 minutes, chill and drain. Pack in layers separated by paper in boxes, (b) Coat slices in thin batter, or egg and breadcrumbs. Deep-fry, drain and cool. Pack in layers in boxes. High Quality Storage Life: (a) 12 months, (b) 1 month.
