(a) Use crisp young stalks. Scrub well and remove strings. Cut in 1in/2.5cm lengths and blanch 2 minutes. Cool and drain and pack in bags. (b) Prepare as above, but pack in boxes with water used for blanching, leaving ½in/1.25cm headspace. High Quality Storage Life: 6 months.
