(a) Use fresh tender corn. Remove leaves and threads and grade cobs for size. Blanch 4 minutes (small cobs); 6 minutes (medium cobs); 8 minutes (large cobs). Cool and dry. Pack individually in foil or freezer paper. Freeze and pack in bags for storage. (b) Blanch cobs and scrape off kernels. Pack in boxes, leaving ½in/1.25cm headspace. High Quality Storage Life: 12 months.
