(a) Cut young marrows or courgettes in ½in/1.25cm slices without peeling. Blanch 3 minutes and pack in boxes, leaving ½in/1.25cm headspace. (b) Peel and seed large marrows. Cook until soft, mash and pack in boxes. High Quality Storage Life: 6 months.
