(a) Scrape and wash new potatoes. Blanch 4 minutes. Cool and pack in bags. (b) Slightly undercook new potatoes. Drain, toss in butter, cool and pack in bags. (c) Mash potatoes with butter and hot milk. Pack in boxes or bags. (d) Form potatoes into croquettes or Duchesse Potatoes. Cook, cool and pack in boxes. (e) Fry chips in clean fat for 4 minutes. Do not brown. Cool and pack in bags. High Quality Storage Life: (a) 12 months, (b) 3 months, (c) 3 months, (d) 3 months, (e) 3 months.
