This is a good method for crushed or sliced fruit, or for soft juicy fruit. The fruit should be washed and drained and may be packed by two methods: (a) mix fruit and sugar in a bowl with a silver spoon, adjusting sweetening to tartness of fruit (average 3lb/1.5kg fruit to 1lb/450g sugar). Pack fruit into containers, leaving ½in/1.25cm headspace, seal and freeze, and label carefully; (b) pack fruit in layers using the same proportion of fruit and sugar; start with a layer of fruit, sprinkle with sugar, then more fruit and sugar, leaving ½in/1.25cm headspace. Seal and freeze, labelling carefully.
