Avoid using apples, which tend to discolour. Brush bottom crust with egg white, to prevent sogginess. (a) Bake pie. Cool and cover with foil or pack in polythene bag. (b) Cover uncooked fruit and sugar with pastry. Pack in foil or polythene bag. High Quality Storage Life: (a) 4 months; (b) 2 months.
