These well repay drying, as so often they do not keep. Peel them and remove any bad parts, and slice them on to muslin on oven racks. Leeks may be cut in strips lengthwise if preferred. Move them about occasionally to help the drying, and when they are quite crisp take them out, and after a little while store them away.
