Conch comes from the word concha, which means “shell” in Spanish. In this process, the flavor and texture of chocolate is refined by warming and grinding the cocoa beans, either in a traditional concher or between rollers. The characteristic taste, smell, and mouthfeel of chocolate are developed at this stage.

Spread the cocoa beans in an even layer on a sheet pan and sort through them to remove any undesirable objects.
After the beans have been roasted, run them through a cacao mill to loosen the husks from the cocoa nibs.
