Also referred to as beancurd, tofu is derived from soya and a really handy high-protein ingredient. It can be served in numerous ways, from smooth and soft to crisp and crunchy. It can be bought in refrigerated packs or longlife non-refrigerated packs. Alone it’s pretty bland, but it has an amazing ability to work well with almost all flavours. Extra firm is best for baking, grilling, frying and stir-fries, while the softer silken tofu works really well blended into sauces, dressings, desserts and smoothies.
