I am a big fan of labneh (Middle Eastern yoghurt cheese). I have used it a few times in this book. It can be bought from Middle Eastern shops or large supermarkets. It’s really simple to make your own with Greek or natural (plain) yoghurt, and you can add herbs or flavourings if you like. It’s great to use in wraps, salads, as a dip or in baked potatoes. See
