Literally stuffed fish. Originally, a fish stuffed with ground fish (usually freshwater varieties, like carp, pike, and whitefish), bread or matzoh meal, eggs, onions, spices, etc., then poached or baked. Today the fish mixture is usually formed into patties and poached.
