Tortellini (‘small tortelli’) are the pride of Emilia-Romagna, Bologna in particular, alongside tagliatelle and lasagne. Miniaturised tortelli formed around the tip of a finger, they require skill and patience to get right. Whilst there must be few Bolognese housewives who don’t know how to make them, most are purchased even in their home town. There is still a healthy cottage industry making tortellini by hand for sale in the shops – anyone who knows anything prefers them hand-made.
