Mung bean sheets, made of ground mung beans, just as transparent noodles, come in round sheets, measuring about 8 inches in diameter. They must be soaked in boiling water for about 30 minutes until they are soft and chalk white before they may be used as a salad ingredient or for cooking. Like most dry ingredients, mung bean sheets may be presoaked and kept soft and resilient for a few hours at room temperature, but once chilled in the refrigerator, the texture hardens and the sheets need to be resoaked in boiling water until soft before using.
