Oyster Sauce

This is a thick brown sauce made of ground oysters and other ingredients. A Cantonese seasoning, it gives color and a subtle “meaty” flavor to food. A good brand is never fishy. It comes in bottles and large cans, and keeps indefinitely tightly covered.
