Rice Sticks

White, thin, and slightly wavy, these sticks (also called rice noodles) are made from ground rice. They are a southern specialty, used in soups and snacks like regular noodles or deep-fried as a garnish for minced dishes. More fragile than wheat noodles, they need only a brief soaking and cooking. They come in ½-pound packages, rolled in tight wads.
