Also called “young com” or “baby young com” on the label, these 2–3-inch tiny yellow corns come in 15-ounce cans (8-ounce drained weight), packed in lightly salted water. Maypride markets the larger length, about 18 to a can. Companion packs a smaller variety, about 30 to a can, and the tiny corns can be somewhat uneven in quality. Other packers may include broken, fibrous, or overgrown corns in their cans, so buy one can and check it before buying several.
To use, drain and rinse the com with cool water to wash off the traces of salt. Unused com may be covered with cool water and refrigerated a week or more. Change the water every 3 days.
