This Cantonese-style seasoning is packaged under many brands, each of them very different in taste and texture. The very best, to my taste, is made by Hop Sing Lung Oyster Sauce Company, and comes in a 14-ounce bottle with a colorful picture of China’s favorite mythological beast (a cross between a dragon, a lion, and a horse) on a small label around the neck of the bottle. It is the only oyster sauce I have tasted that is properly rich, flavorful, and gelatinous. You pay for what you get relative to other Chinese oyster sauces, but it is worth every penny.
