It is often said that fruit cake cannot be baked in a gas oven. Everyone knows that is the perfect way to cook a white sponge cake, and a fruit cake cannot need more careful treatment. Still, if one has had little experience in baking, it might be safer to steam the loaves until three-fourths done and then finish in the oven, with one burner turned half on.
