Use flaky kosher salt for cooking for its clean flavor. Keep a ramekin or small bowl of it alongside the stove for cooking.
It is easy to pinch up and blends in quickly. Use your own judgment and taste to determine how much salt is right. Sea salt, with its minerally flavor and crunchy texture, is sometimes listed for sprinkling over a finished dish.
