Jaggery is a sweetener made from boiled sugarcane juice. It has an earthy taste and is commonly used in Gujarati cuisine. For Gujaratis, jaggery is an essential ingredient, as our cuisine has a balance of sweet and sour flavors. Without jaggery, our food would lose its essence.
