With a small, sharp knife cut the tough skin from the tomatoes where it has been attached to the stem. Have a large pot of water boiling on a high flame. Lower each tomato into the boiling water and remove after one to three minutes depending on the tomato’s degree of ripeness. Plunge into iced water immediately. The skins will slip off when the tomatoes are cool.
