Simmering is the process of cooking in a liquid at a temperature of 95°-98°. Boiling is a violent process suitable only for cooking pasta, for reducing sauces over a short period or for removing stains from kitchen cloths. Boiling destroys the texture and nutritive qualities of meat and vegetables.
