The width of a French kitchen knife enables the blade to be pressed against the first joint of the fingers below the knuckles thus keeping the knife in place without the cutting edge coming into contact with your hand. By loosely folding the fingers under the palm of your hand and tucking your thumb behind them, you are able to grip the material being chopped and at the same time prevent bloodshed. This method does feel uncomfortable at first but persevere β€” it will become one of your most favoured skills.
