It is a most annoying fact that the word shallot in Australia has been applied to spring onions, creating much confusion. In this book there is not a spring onion in sight. Where shallot is used it relates to the onion that the French call eschallotte. Shallots look like a cross between brown onions and garlic. They usually have three cloves and the skin is similar to that of a brown onion. In size they have the approximate diameter of a 50-cent piece. They keep very well in a dry airy environment. If the atmosphere is too damp they tend to sprout.
