Red Wine Vinegars Shallots

This is a good way of cutting through a milky oyster, though it is perhaps wasted on a sweet, nutty rock oyster or a Belon. Mix together 1 tablespoon very finely chopped shallot and 3 tablespoons red wine vinegar and serve next to the oyster platter.
