Cleaning salt-packed anchovies

Rinse the anchovies in cold water with a little vinegar to remove the salt. Fillet them, by cutting off the head and making a slit all along the underside with a small, sharp knife. Remove the central bone by pulling it away by the tail with your one hand, while holding the anchovy in the other. You will be left with two attached fillets.
