This is a cow’s milk, blue cheese. There are two types — one sweeter and the other with a sharper tang. They are suitable for eating with bread, and with certain fruits such as pears and apples. Gorgonzola is also used for pizza toppings, and with sauces for pasta, gnocchi and polenta dishes.
