For risotto, a plump, almost round short grain rice, is used. It always remains slightly al dente (firm to the bite). Some typical ones include arborio, and carnaroli. Long-grain rice is used for rice salads and for stuffing tomatoes, etc. Short-grain rice is used for soups as well as for baking in puddings, etc.
