This is a real show stopper. Walk into a market and try not to see if it’s there. Rosettes of loose, ruffly-edged leaves of cream, violet, or spruce, each veined and etched with designs of one or all of the other colors, branch out (kale-fashion) from a central stalk. Like an old-fashioned wedding bouquet edged in lace, flowering kale is the chic caterer’s dream, its subtle hues and fluffy forms ideal for filling out table displays and formal cornucopias, holding container of dips, or standing in for fruit bowls.
