Preparing Lobsters

Put the lobsters in a heatproof container that holds them snugly. Cover with cold water, then drain off the water, measure it, and pour it into a large pot. Bring the water to a boil and add 110 grams white vinegar for every 7.5 liters of water. Pour the boiling liquid over the lobsters and let them steep for 2 minutes if using 450- to 680-gram lobsters, 3 minutes for 900-gram lobsters.
Remove the lobsters from the hot water, but do not discard the water. Twist off the tails. Twist and pull off the claws and return them to the hot water for 5 minutes; remove from the water. Reserve the bodies.
