Xanthan gum

Usually found in the ‘free from’ aisle at the supermarket, xanthan gum is a thickening agent and stabilizer, useful for binding technically difficult recipes, such as vegan meringues, when sometimes no matter how much you whisk, they just won’t pull together. A little goes a very long way.
