Bok choy, or pak choy, is a type of Chinese cabbage and is sold in both large and baby sizes. The leaves and stalks are both eaten. Stir-frying is my favorite way to eat them. If the stalks are tough, blanch them first before stir-frying (see Bok Choy and Crispy Tofu).
