Cauliflowers are flower heads with tightly packed tiny primordial buds that never flower due to a genetic mutation. This head is sometimes called a curd and, when cut in half, it always reminds me of the human brain. Cauliflower comes in white, purple, yellow, orange, and green and the outer leaves resemble collard greens. Cauliflower can be eaten whole, chopped, or grated, and the latter is great in stuffed parathas and is used as a grain-free โ€œriceโ€ option.
