Tofu skin, also known as bean curd skin or yuba, is the layer of skin or film that forms on the surface of hot soy milk. It is used to wrap dim sum Rainbow Tofu Skin Rolls and is a good textural ingredient with a chewy bite to add to dishes like Buddha’s Delight and Poon Choi.
