Arrange fresh, ripe tomato slices on a platter. Sprinkle with sea salt and pepper and drizzle with olive oil. Top with fresh basil and sliced fresh mozzarella. Or, use crumbled feta cheese and chopped fresh herbs such as thyme or flat–leaf (Italian) parsley.
