Peeling shrimp

Working with one shrimp (prawn) at a time, pull off the small legs on the underside. Starting with the section of shell closest to the head, gently pull it up and lift it away. Leave the tail intact or remove it, depending on your preference or as the recipe directs. To remove it, hold firmly as you pull so the meat remains.
